Hiiii bunnies! I have been such a bad blogger but since I was put on the list at Healthy Living Blogs (which brightened up my day to no end) I have decided to get back on it and give you all something worth reading. On top of this it seems at the moment herbylove is the only blogg flying the flag for England so I better make sure she earns her place!
Today was a typical Sunday…I was woken up by my lovely boyfriend and Jenkins the cat with a bowl of weetabix, soy milk and topped with a banana then off to lunch at my mum’s house! What was for lunch, you ask? A big traditional Sunday Roast of course which is as per usual chez herby’s house, hehe!🙂 I had everything except the Roast Chicken of course. That included, mashed parsnips, suede, roast potatoes, stuffing and gravy🙂
Oh rewind to before lunch where me & the boyf went shopping on the way to my home and I brought a pair of cute grey laced up shoes (they may sound yucky but trust they were lovely…watch this space for pictures) and I was on the look out for a gorgeous handpainted bowl as seen a few weeks ago. I was really disapointed though as they had yellow & turquoise but no pink😦 So I went away empty handed. Oh stayed tuned for a post full of my lovely recent shopping trips finds! My loss (of money) is your gain! Dessert was a lovely healthy morsel, baked pineapple & vegan whipped cream. It’s such a shame I wasn’t able to take a picture. But from this moment forward I pledge to be a good food blogger and take pictures of everything I eat! Agreed? AGREED!!
Anyhoo, the reason I came to write this post was to share with you a delicious recipe I found over at VegWeb when I was searching for a chocolately morsel! I was looking for anything which had chocolate and what I ended up finding was a filling, oatmealy chocolate muffin! It was decadent and filling and didn’t make me feel sludgy inside like chocolate muffins I have had in the past. Without further ago I present to you Heavenly Double Chocolate Muffins (vegan friendly)
– 2 bananas
– 1/2 cup almond milk
– 1/2 cup brown sugar
– 1/3 cup raw sugar
– 6 tbsp. applesauce
– 1 teaspoon vanilla extract
– 1/2 tablespoon white vinegar
– 1-1/2 cup cocoa powder
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda (I used bicarbonate of soda UK peeps)
– Pinch of salt
– 1/2 cup vegan chocolate chips
– 1-1/2 cups rolled oats
what you have to do:
1. Preheat oven to 350 degrees F/175 degrees C
2. Mash bananas until creamy consistency is reached (can use food processor). In a bowl combine the mashed banana, almond milk, brown sugar, white sugar, applesauce, vanilla extract, and white vinegar.
3. In a separate bowl sift together wholewheat flour, cocoa powder, baking powder, baking soda, and salt.
4. Combine wet and dry ingredients and mix well. Stir in chocolate chips, then oats and fill the 12 muffin cases.
5. Bake for about 20 minutes. The muffins should be firm on top and a knife should come out clean.
These muffins work out to be around 348 calories and 3 grams saturated fat and could definitely replace an oatmeal bar with a cup of coffee or whatever your daily fix is !🙂 Leave a comment letting me know if you’ve made these and what you think!
