I would like to apologise for my lack of posting. Everything is okay in the life of Amber! I am just taking a while to adjust to new flat and university year two life. I will be posting soon! Have no fear! 🙂

I am off to eat toast and marmite and finish off all my work! (And yes I am still wearing my pyjama top!)

english summer.

I love blogging! It makes me feel productive on my long student summer holiday, hehe! I am writing to you during a very cold and windy summer day! ENGLISH SUMMERS?! I just thought I’d write an update to say that there was no cows milk used in my cereal yesterday, so the mystery still hasn’t been solved! But nevermind. breakfast today was the usual bran flakes, banana and soy milk and I just snacked on a chocolate chip clif bar as I am waiting for the boyf to come back from his cycle before I prepare lunch which I have decided will be multiseed pitta bread with a mushroom burger and salad! YUMMY!

Oh and stay tuned for a recipe for very simple delicious vegan blueberry muffins! I made them last night after dinner (which was veggie ratatouille with couscous) and they turned out so pretty,

mystery city.

Hiii peeps, I am so excited with what I have done! See over there —> I have put a picture and text on the side! This may seem like easy business for most of you but for me it took a while to find out how to do it!

Any hoo I have sad news to share…I did not win the eBay item I was bidding for! I was pipped to the post! Six seconds after my boyfriend (bidding on behalf of me as I was out on a run) put a bid in this other pesky bidder did the same and won with about three seconds to go! Sad times! And now since the bidding is over I can now reveal it was a lovely to go pink starbucks tumbler I was bidding on! Limited Edition!

Isn’t she pretty? I had to google image search this as I can no longer view the picture on my ebay account! While I was google image searching I saw a baby pink tumbler! Eeee!! EBay mania has taken over me.

Rewind to this morning where I was woken up by my lovely boyfriend carrying some weetabix with a banana and soy milk, or was it? As I write to you now I am in a bit of a pickle. I have been having very bad stomach cramps this morning and I have a suspicion it was down to COWS MILK, yes COWS MILK being used in my breakfast. This would only have been an innocent mistake on my boyfriend’s behalf but here are the facts.

– I went to make a coffee and there was a new unopened soy milk carton in the fridge.
– No carton in the recycling bin or normal bin.

Unfortunately I will have to wait half an hour for the answer to this mystery as he is out on cycle and won’t be back till then, but don’t worry I will keep you informed! (I love over dramatics, teehee!)

Oh almost forgot to mention, I went for a run last night and it felt amazing! I hadn’t been in a couple of weeks and I have really missed it! I feel amazing this morning and full of energy! My running routine usually consists of running for half an hour then walking for five minutes and I have been working this up to 60 minutes, increasing running time by five minutes each week. BUT I have been curious as to how far I can actually run. I don’t use a treadmill and so have mapped a 2 mile and 3 mile route and will be attempting the 2 mile one either today or tomorrow! I am really excited as to how far I can run and am guessing it will probably be just under 3 miles!

Any hoo I am off now to search out delicious eats for lunch and ponder the mystery of the soy milk,

chocolate fix.

Hiiii bunnies! I have been such a bad blogger but since I was put on the list at Healthy Living Blogs (which brightened up my day to no end) I have decided to get back on it and give you all something worth reading. On top of this it seems at the moment herbylove is the only blogg flying the flag for England so I better make sure she earns her place!

Today was a typical Sunday…I was woken up by my lovely boyfriend and Jenkins the cat with a bowl of weetabix, soy milk and topped with a banana then off to lunch at my mum’s house! What was for lunch, you ask? A big traditional Sunday Roast of course which is as per usual chez herby’s house, hehe! 🙂 I had everything except the Roast Chicken of course. That included, mashed parsnips, suede, roast potatoes, stuffing and gravy 🙂

Oh rewind to before lunch where me & the boyf went shopping on the way to my home and I brought a pair of cute grey laced up shoes (they may sound yucky but trust they were lovely…watch this space for pictures) and I was on the look out for a gorgeous handpainted bowl as seen a few weeks ago. I was really disapointed though as they had yellow & turquoise but no pink 😦 So I went away empty handed. Oh stayed tuned for a post full of my lovely recent shopping trips finds! My loss (of money) is your gain! Dessert was a lovely healthy morsel, baked pineapple & vegan whipped cream. It’s such a shame I wasn’t able to take a picture. But from this moment forward I pledge to be a good food blogger and take pictures of everything I eat! Agreed? AGREED!!

Anyhoo, the reason I came to write this post was to share with you a delicious recipe I found over at VegWeb when I was searching for a chocolately morsel! I was looking for anything which had chocolate and what I ended up finding was a filling, oatmealy chocolate muffin! It was decadent and filling and didn’t make me feel sludgy inside like chocolate muffins I have had in the past. Without further ago I present to you Heavenly Double Chocolate Muffins (vegan friendly)

– 2 bananas
– 1/2 cup almond milk
– 1/2 cup brown sugar
– 1/3 cup raw sugar
– 6 tbsp. applesauce
– 1 teaspoon vanilla extract
– 1/2 tablespoon white vinegar
– 1-1/2 cup cocoa powder
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda (I used bicarbonate of soda UK peeps)
– Pinch of salt
– 1/2 cup vegan chocolate chips
– 1-1/2 cups rolled oats

what you have to do:
1. Preheat oven to 350 degrees F/175 degrees C
2. Mash bananas until creamy consistency is reached (can use food processor). In a bowl combine the mashed banana, almond milk, brown sugar, white sugar, applesauce, vanilla extract, and white vinegar.

3. In a separate bowl sift together wholewheat flour, cocoa powder, baking powder, baking soda, and salt.

4. Combine wet and dry ingredients and mix well. Stir in chocolate chips, then oats and fill the 12 muffin cases.

5. Bake for about 20 minutes. The muffins should be firm on top and a knife should come out clean.

6. Eat!!

These muffins work out to be around 348 calories and 3 grams saturated fat and could definitely replace an oatmeal bar with a cup of coffee or whatever your daily fix is ! 🙂 Leave a comment letting me know if you’ve made these and what you think!
